Enjoy this sauce, enjoy the summer and let me know what fun delicious and nutritious foods you make with this summer’s blueberries.

Ingredients

2 cups fresh blueberries, washed, cleaned and dried

1 cup water,

1 teaspoon vanilla extract

2 Tablespoons maple syrup, if desired

Zest of 1 lemon

1 Tablespoon lemon juice

Cooking Instructions

  1. Place all ingredients in a medium sauce pan, bring to boil.

  2. Once boiling, lower temp and simmer until thickened and the berries are cooked through. Stir frequently to avoid burning and sticking.

Taste your berries! If they’re ripe and sweet, you will not need to maple syrup.

This recipe can be adjusted to create a savory sauce for pork, beef, chicken or fish by adding 1 Tablespoon of apple cider vinegar, 2 teaspoons of fresh ginger, 1 teaspoon dried garlic powder and diced green onions.
