Flourless Banana Pancakes

Truly flourless, delicate and delicious. Be sure to top them with the Blueberry Sauce!

This makes 4 medium sized pancakes or about 8 silver dollar ones.

Ingredients

1 and 1/2 large, very ripe bananas

2 eggs

1/2 teaspoon vanilla extract

1/4 teaspoon cinnamon

1/8 teaspoon baking powder (aluminum free)

Pinch of sea salt

Cooking Instructions

  1. Whisk egg until light and fluffy. In a separate bowl mash the banana with a fork.

  2. Add your whipped egg, cinnamon, baking powder, vanilla, and salt to the banana mash. Whisk until nicely combined.

  3. Add a bit of coconut oil spray or butter to a hot nonstick pan or griddle.

  4. Scoop about 2 ounces of batter into the pan (think: ice cream scoop size). Let the pancake bubble and set around the edges. Flop and lightly cook the other side.

  5. Serve with your favorite toppings! (I like these with fresh blueberry sauce, fresh raspberries, and a dollop of cultured sour cream)
