Broccoli Bread
Today we’re going to make a fabulous recipe. The broccoli bread has become one of my all-time favorites! I have several dear friends who have been patiently waiting for me to share it. I love it because it is so easy to make and everyone—even the pickiest, squirmiest little ones, and the grumpiest, crankiest old ones—love it!
I generally make this recipe one of two ways; one is a large rectangular flatbread and the other as individual rounds that work great for burgers, or tuna sandwiches. For the rounds I use a ¼ cup measure and then flatten into a circle like a burger bun or roll shape. Once you make this recipe you will see how easy it is and how versatile too.
You can put almost anything on it, you could even make pizza flatbread with it. YUM! So, move over cauliflower pizza crust and hello green bread! Enjoy and keep a lookout for my how-to video. I’m hoping it will be out in about two weeks.

Ingredients
4 cups of broccoli, steamed
1 and ⅓ cups gluten free flour (I use almond flour)
¼ cup parmesan cheese
8 basil leaves (or other herbs)
4 large eggs
½ teaspoon each salt and pepper
Cooking Instructions
Preheat your oven to 350 F degrees.
Clean and trim 1 large head of fresh, organic broccoli. Place in steamer and steam until fork tender (not mushy). Cool immediately by running under cold water or placing in an ice bath. Once cool, dry well with a clean kitchen cloth.
Place all ingredients into a food processor or blender. (You could also chop the broccoli very fine and mix in a bowl until combined if you don’t have the equipment)
Transfer the dough onto a cookie sheet pan, greased with parchment paper. ( I would use avocado oil spray or brush with a touch of olive oil).
Flatten dough out evenly with your hand or a spatula until you have a nice level rectangular shape. Or use a ¼ cup measure and then flatten into a circle like a burger bun or roll shape.
Bake on the middle rack, 25 minutes.
Allow the bread to cool before cutting.
