Pumpkin Chocolate Chip Brownies

Everything in moderation, even moderation.

Ingredients

  • 2 cups almond flour

  • 1/2 cup flax meal

  • 2 tsp. ground cinnamon

  • 1/2 cup coconut sugar

  • 1/2 tsp. salt

  • 1 tsp. baking powder

  • 2 eggs

  • 1 cup organic pumpkin purée

  • 1 Tbls. vanilla extract

  • 1/3 cup bittersweet chocolate chips

  • 1/3 cup chopped walnuts

Instructions

  1. Spray a 9 inch pan with avocado or coconut oil and set aside.

  2. Preheat your oven to 350°.

  3. Mix all your dry ingredients together.

  4. In a separate bowl, mix all your wet ingredients together.

  5. Add your wet ingredients to your dry ingredients, carefully. Mix gently with a spatula only until all the flour is just incorporated.

  6. Fold in your nuts and chocolate.

  7. Pour your batter into your greased pan and bake 25 minutes.

Serving

Once cooled, cut into 12 pieces and serve. Some fresh yogurt or whipped cream is a decadent but delicious addition.

Notes

This recipe has been modified from an original recipe by Living Healthy with Chocolate. I added the baking powder, extra egg and walnuts to improve the texture of this lovely dessert.
